Soft Peanut Butter Cookies

Ingredients
1 and 1/2 cups all-purpose flour
3/4 cup creamy peanut butter
3/4 cup light brown sugar (packed)
1/4 cup granulated sugar
1/2 cup unsalted butter (softened)
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/4 teaspoon salt
*optional add-ins: chocolate chips, m&m’s, crushed nuts, dried fruit
Instructions
-Preheat oven to 350° F (177° C). Line baking sheet with parchment paper or lightly grease.
-In a large bowl whisk together the flour, baking soda, and salt.
-In a separate bowl cream together the butter, brown sugar, granulated sugar until well combined.
-To the butter mixture add the peanut butter, egg, and vanilla and mix or beat until fully combined.
-Slowly add the flour mixture to the peanut butter mixture and gently combine until mixed. If you are adding any additional items like chocolate chips or dried fruit fold them into the batter.
-Form balls of the dough in your desired size. Place them on the baking sheet leaving enough space between each cookie. Using a fork gently press down on each cookie to form a cross pattern.
-Bake for 10-12 minutes or until the cookies have set. Let cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
**Storage Tips**
These cookies can be stored at room temperature for up to 1 week in an air-tight container.
The uncooked dough or cooked cookies can both be stored in the freezer for up to 3 months.
