Peanut Butter Cup Pie – No Bake
Ingredients:
1 package regular Oreos
1 3/4 cup unsalted butter
2 cups smooth peanut butter
1 cup powdered sugar
8 ounces heavy whipping cream
1 cup dark chocolate
5 ounce can full-fat coconut cream (chilled 3+ hours)
Directions:
Crust:
-Blend package of Oreos with 3/4 cup melted butter
-Press firmly into a 10-inch pie pan and put in the fridge
Filling:
-Using a hand mixer combine 1 cup room temperature butter with peanut butter and powdered sugar.
-In a separate bowl add the whipping cream and mix until it forms soft peaks. Gently fold the whipping cream into the peanut butter mixture.
-Spread the peanut butter mixture into the pie crust and return it to the fridge.
-Place a saucepan over low heat and combine coconut cream and chocolate chips. Stirring until completely melted and smooth. Pour mixture over peanut butter filling.
-Chill pie for 4 hours and serve. It can also be stored in an airtight container and froze.
